No. Without a Watch, your iPhone estimates sleep from motion and you confirm it in the morning. Only sunlight depends on the Watch: without it, the Dune planet and Sunrise don’t appear, and everything else works the same.

No. Sign in with the same account and your sky comes back. Energy and sleep debt are recalculated from Apple Health.

In the app, go to Settings › My account › Delete account. Your account and cloud data are deleted, and on-device data goes away when you delete the app. Deleting your account doesn’t cancel your subscription: cancel it in iPhone Settings too.
